Scotch Eggs

Update 12/22 I have now changed to deep frying these without baking them in the oven. The eggs are added to boiling water for 6 minutes and then lifted out into ice cold water. Once the egg is made I heat around 6cm oil in a large saucepan until it reaches 160°c. Without a meat thermometer this is when breadcrumbs...

Pizza!

So I’ve never made pizza before but thought I’d give it a go. It starts off like bread with the dough. The recipe I was using (again from the good housekeeping book) used a ratio of 8oz of flour and 150 ml of water. Once the dough has risen once, it needs to be rolled and had oil spread over...

Lasagne

So last night we had bolognese and had lots of leftovers so decided to make a lasagna. Now, when making this we had lots of cheese and bacon in the fridge that needed eating up quickly. So we bought a round loaf to make this. All we had to do was cut up the loaf add the cheese, bacon and some garlic. It was amazingly tasty even if very unhealthy.

Diamond Wedding Cake

I made a cake for a diamond wedding anniversary the other year. As tradition in my family, a good amount of a bottle of brandy was added into the fruit cake before it was iced.

Kitkat Cake

This is was pretty fun to make if a bit fiddly. The cake is just a sponge cake, covered in buttercream. I then stuck kitkat fingers all round the outside and pressed individual m and ms all over the top.

Nixon Special

Now this isn’t something I’ve ever cooked myself, I’ve always had it done for me. I originally found this on the marmite Facebook page. It soon became a firm favourite with my immediate family and then nicknamed a “Nixon Special” by the rest of the family. It’s a crumpet with lots of marmite and a runny poached egg on top

Christmas Dinner

So last Christmas we hosted for the first time. Sadly, I ended up being quite ill, so I had to get a lot of help from my mum to get the dinner ready. But it all ended up done and was a great success. At the bottom we have cauliflower cheese and cheesy leeks. Behind that we have roast potatoes...
